My Mum’s Christmas Recipe For Stollen (Festive Fruit Loaf From Germany)

Over to you, Ginger. And happy baking! One of the most famous German cakes is most certainly the Stollen, a rather heavy sweet yeast bread that is often associated with Christmas.

Filled with raisins, candied peel and almonds, the way the Stollen is traditionally folded and covered in a thick layer of icing sugar is vaguely reminiscent of a swaddled baby — the Baby Jesus, to be precise.

Sift the flour into a large bowl, then form a well in the middle of the flour into which you pour the milk; stir in the yeast and a pinch of the sugar, then cover it with a tea towel and leave to rest for around 10 minutes.

Add the remaining sugar, the vanilla extract, salt, lemon zest and eggs and knead until the dough begins to form a ball.

You might not be able to incorporate all the flour. Melt the butter over a low heat, then mix it into the dough. Keep kneading until it has been fully incorporated, then cover and rest it for a further 30 minutes.

Add the chopped almonds and the raisins and peel, mix well, then cover and rest for a further 30 minutes. To prepare the fruit: Combine the fruits and orange juice or rum, cover, and set aside at room temperature for up to 12 hours.

To prepare the dough: Using a stand mixer, mix and knead together all of the dough ingredients except the almonds to make a smooth, soft dough.

To make the filling: Divide the marzipan into three pieces and shape each into a flattened 7" log. To assemble the stollen: Knead the fruit and almonds into the dough.

Turn the dough out onto a lightly greased surface, divide it into three pieces, and shape each piece into an 8" x 6" oval. Place one piece of almond paste or marzipan down the longer center of each oval, and fold dough over it lengthwise, leaving the top edge of the dough just shy of the bottom edge.

Place the loaves on a lightly greased or parchment-lined baking sheet. Cover them, and let them rise for 45 to 60 minutes, until puffy.

Remove the stollen from the oven, and brush them with melted butter. So now I always use the aluminum foil trick and my Stollen turns out great. Let me show you how I make it!

To make Stollen you need a few specialty ingredients. Rum soaked raisins add flavor and sweetness to the Stollen. On the next day, the raisins will have soaked up all the rum and are ready to be added to the dough.

Another not that common ingredient in this recipe is the candied lemon and orange peel. In Germany, these two are easily available in every grocery store during the Holiday season but you can also order them online Candied Orange Peel , Candied Lemon Peel or you can make your own.

I have never tried to make it myself but people seem to have a lot of success with this recipe. To shape the Stollen, put the dough on a large enough baking sheet covered with parchment paper and shape it into one or two oval-shaped loaves.

I like to make to medium sized Stollen from this recipe because then I can gift one to friends and keep one for us. Stollen is very rich and sweet so you can get a lot of slices out of one loaf.

Use a rolling pin to flatten the middle of the loaf so that you have two bulges. Flatten one of the bulges like you see in the second picture below.

Stollen tends to spread so after folding the Stollen you need to fold an aluminum foil ring to keep the Stollen in shape. To make the aluminum ring for the stollen, fold a long piece of aluminum foil three times and form a ring with it.

Secure it with some metal clips they need to be oven proof or press the ends together firmly and fold it around your unbaked Stollen.

When the Stollen is done brush it with melted butter. This adds flavor and makes the Stollen moist. It will soak up all the butter. Then you have to sprinkle it with granulated sugar and then with a generous amount of powdered sugar until it is completely covered.

This might sound like much but it will keep the stollen preserved and helps to keep the flavors in the Stollen.

After letting the Stollen cool completely, it will get sprinkled with powdered sugar again before being wrapped in parchment paper and then in aluminum foil.

Put the wrapped Stollen in an airtight zipper bag or a metal tin for weeks! It gets better and better with time. A perfect Christmas treat!
